Takes 25 minutes Ingredients4 wholemeal or white pita pockets
⅓ cup of passata or pizza sauce ⅔ cup mozzarella cheese, grated ¾ cup cherry tomatoes, sliced ½ cup sweet potato, grated ½ cup yellow capsicum, sliced ½ cup green capsicum, sliced ½ cup red cabbage, shredded |
Instructions
1. Preheat oven to 220° C. Line a baking tray with baking paper.
2. Spread passata/pizza sauce evenly over each pita and sprinkle with cheese.
3. Arrange the tomato, sweet potato, capsicum and cabbage in rows over the cheese.
4. Bake for 10 minutes or until cheese has melted.
5. Cut into slices and serve.
