Fried RiceServes 4 people
Takes 30 minutes Ingredients1 cup of brown rice
1 tablespoon extra-virgin olive oil 2 bacon rashers, finely diced ¼ cup of spring onion, diced ¾ cup frozen peas ¾ cup green beans, cut into pieces 1 carrot, finely diced 2 tablespoon salt-reduced soy sauce 2 eggs, lightly beaten |
Instructions
1. Cook the rice according to packet instructions.
2. Heat the oil in a large frying pan over medium heat until sizzling.
3. Add the bacon, peas, beans, carrots and cook, stirring frequently, for 3-4 minutes or until lightly cooked.
4. Add the cooked rice and continue to cook for 5 minutes.
5. Stir through the soy sauce and cook for another 2 minutes.
6. Move the rice mixture over to one side of the pan and pour in the egg.
7. Let the egg cook for 30 seconds, scrambling it with a fork, then mix it through the rice mixture.
8. Serve with the chopped spring onion.

Tips
For vegetarian option omit the bacon or swap for chopped mushrooms.
