Easy Peasy Zucchini SliceServes 8 slices
Takes 45 minutes Ingredients1 cup wholemeal self raising flour
2 medium zucchinis, grated 2 medium carrots, grated 200 grams of canned corn kernels 1 cup tasty cheese, grated ¼ cup extra-virgin olive oil 5 eggs, lightly beaten Salt and pepper |
Instructions
1. Preheat oven to 170° C. Grease and line a non-stick lasagne dish.
2. In a large bowl, combine flour, zucchini, carrot, corn, cheese, oil, eggs, salt and pepper and mix.
3. Pour into a lasagne dish.
4. Bake for 30-35 minutes until golden and set. Allow to cool slightly before cutting.
5. Serve with a side salad.
